Nagaimo no acharazuke / Chinese yam pickled in spicy sweetened vinegar

By simply adding taka no tsume red chili pepper to sweetened vinegar, you have another standard marinade for pickles. Fresh nagaimo Chinese yam stays relatively crisp in the marinade, and by Day 2 it becomes a bit milder although still offering some crunch and piquant sensation. As the pickle name's origin -- achar -- suggests, it pairs very well with a number of cuisines beyond Japanese dishes.

Petoraaru karei no yuanyaki / grilled yuan-marinated petrale sole

This is one of my favorite ways to eat white-fleshed fresh fish. The marinade is a simple mixture of soy sauce, mirin and sake in equal parts, which gives the fish a slightly salty sweet note. It is very good with somewhat fatty or sweet fish as well as sea scallops.

Kurumafu no katsu / gluten cake cutlets

Tasty, filling yet light cutlets made with gluten cakes. Compared to more commonly known tonkatsu pork cutlets, this dish is much lower in calories and gentler on your stomach. Gluten cakes are first flavored with dashi stock, shoyukoji soy sauce rice malt and vinegar to get a meaty taste, followed by usual preparation of cutlets, but in a leaner way (below). No shoyukoji available? Balsamic vinegar does a great job in that case.

Iri-kuromame gohan / steamed rice with toasted black soybeans

When something crunchy is wanted in steamed rice, how about toasted kuromame black soybeans? Kuromame's dark skin also adds nice color to the rice. Its deeper flavor than regular daizu soybeans is another benefit, ensuring tasty results without seasoning. I mix in some mochigome sweet rice, partly because the uruchimai regular rice I use is medium grain. If you use short-grain regular rice, which is more glutenous than medium-grain regular rice, adding mochigome is optional.

Fuki to satsumaage no nimono / Japanese butterbur and deep-fried fishcakes in broth

This is a reduced-sodium version of previously posted fuki to kamaboko no nimono (Japanese butterbur and fishcakes in broth). The process is pretty much the same, other than soaking fishcakes in boiling water to desalinate them in advance. Seasonings are tweaked a bit -- sweet elements (sake and mirin) and the salty ingredient (soy sauce) are both reduced while adding a tiny amount of rice vinegar. The result? It is just as tasty as the older version.

Kaminaridofu / pan-fried tofu with soy sauce and katsuobushi

With the literal meaning of "thunder tofu," this dish is well named; the water from these small cubes of firm tofu makes a rumbling sound when fried at high heat. For the sodium-savvy version below, I use less oil so that the amount of seasoning (soy sauce in this case) can be reduced. As a result, the tofu cubes only make a tame roar, if any. While the dish is now less entertaining to cook in an audio-visual sense, it has the advantage of requiring less cleanup of spattered oil. Taste-wise, this is quite strong thanks to the intense flavor of katsuobushi bonito flakes, and the strong flavor is highlighted by refreshing green onion slices. A small yet satisfying dish.

Takenoko no tsukeyaki / sauteed bamboo shoots in citrus soy sauce

This saute can be either strongly or softly flavored by adding or not adding marinade to the frying pan toward the end. Simply sauteing marinated bamboo shoots would naturally result in a soft flavor where their sweet yet tangy taste comes through. When a stronger flavor with punch is desired, continue sauteing bamboo shoots with some of the leftover marinade. In either case, eringi king oyster mushrooms compliment bamboo shoots really well.

Ninjin no shirishiri / stir-fried shredded carrot with eggs

A tasty everyday dish from Okinawa that has been gaining popularity across Japan in recent years. Slowly sauteing carrots with a small amount of oil enhances the sweetness of the vegetable, and eggs add a gentle, rich taste. Among a number of variations, canned tuna is often mentioned as an addition. The recipe below features okara-konnyaku (soybean pulp yam cakes) to make the dish more filling as well as snow peas for color.

Here is an example of how to use my meaty meatless okara-konnyaku bits. Just like other strong flavored items, these bits cooked with dried shiitake and gobo burdock root make a great topping for steamed rice. Oil-free scrambled egg with dashi offers a mild balance, with green onion slices accentuating the dish with a softly spicy note.

Okara-konnyaku no nikumiso-fu / sweet and salty fried ground soybean pulp yam cakes

A meaty meat-less topping for noodles, rice and more. This is the latest popular creation using okara soybeans at our house. It also features gobo burdock root and dried shiitake mushrooms for deeper taste, aroma and variation in texture. Its strong flavor translates into keeping longer in the fridge. One major disadvantage is that Tom wants to eat more than he should. This is made to fit a sodium savvy diet, but take care with how much you eat.

Murasaki tamanegi to renkon no amazuzuke / red onion and lotus root in sweetened vinegar

A handy small side dish or condiment to accompany other dishes or in a bento box. Its pleasant color and refreshing taste offer a nice change of pace. While red onion alone would become vivid purplish pink in the vinegar, adding another pale color ingredient -- lotus root in this case -- results in a much softer pink for both ingredients.

Myoga buds naturally turn pinkish in vinegar. Often served as a colorful little companion to grilled fish in summer, these pickles are also tasty when added to steamed or sushi rice, noodles, and grilled or fried vegetables such as eggplant.

A variation of leafy greens stir-fry with egg and soybean pulp. Flavoring with a small amount of soy sauce alone is not strong enough for some people, including Tom. While adding shiokoji salted rice malt or salt usually takes care of the issue, curry powder, a versatile spice, gives an instant appetizing boost without adding sodium. The spice also results in a meaty taste with the egg + soybean pulp mixture.

Okara-iritamago no okaka mazegohan / steamed rice with scrambled soybean pulp, egg and bonito flakes

An easy makeover of plain steamed rice into a tasty comfort meal. Scrambled eggs fluffed up with fiber-rich okara increase the overall volume of rice, so even one-third of the entire recipe is quite filling. Mild okara-egg is balanced with the strong taste and aroma of okaka or katsuobushi bonito flakes. Although forms are totally different, onigiri rice balls came to mind when I first tasted this rice. Yummy!

Nanbanzuke / deep-fried fish marinated in sweet and sour broth

One of our standard dishes for get-togethers. This is on the mild end, as broth is prepared with rice vinegar and plenty of dashi, making it go well with meals or drinks as well as with both Japanese and non-Japanese dishes. Because of high dashi content, it tastes better from Day 2. Makes a great bento item as well.

Seriyaki / water dropwort with konnyaku noodles and thin deep-fried tofu

Although the name literally means "roasted/grilled" seri, seri in this dish is usually blanched and mixed with other ingredients, at least with the regional seriyaki in Akita Prefecture. A past simple version, possibly in a different region, used a roasting or grilling technique to prepare seri. So why not grill seri to intensify its flavor and then cook it as Akita people do?
Seri roots are probably the tastiest part, as the roots get rave reviews with seri grown in the Mitsuseki region in Akita. While store-bought seri here does not come with yummy roots (and my own seri is impossible to dig in the hard-frozen ground outside), you can still enjoy the toasty note and sweet juiciness of the vegetable from grilling.
