Taiwan-fu tamago kureepu / dan bing / Taiwanese egg crepes

Found both on the street and at specialty takeout & eat-in eateries, egg crepes with various fillings are one of the many breakfast choices in Taiwan. Dan bing with ham was my usual choice at an eatery near my work. The crepes presented here are adapted from a Japanese translation of a Taiwanese cookbook by Zhou Qingyuan (周清源). To lower sodium content, I skip the salt and use cold milk instead of cold water. Below is my current favorite combination with alderwood smoked salmon, a Pacific Northwest specialty, and Thai basil with a note of anise.

Horenso, moyashi, sumookusaamon no ohitashi / spinach, mung bean sprouts and smoked salmon marinated in light broth

Alderwood smoked salmon, a local specialty, works as a great addition to enhance the flavor, aroma and texture of ohitashi, a simple vegetable dish. Soaking the smoked salmon takes away some of the sodium, so this is a good way to enjoy smoked salmon if you miss it because of following a low-sodium diet. Make sure to use only a small amount of smoked salmon -- the main characters of this dish are vegetables, and overuse of smoked salmon could make it taste fishy. This recipe also works as a quick, reduced-sodium version of a past recipe featuring shiozake salted salmon, shungiku garland chrysanthemum and moyashi mung bean sprouts

Sumooku saamon to shungiku no mazegohan / steamed rice with smoked salmon and garland chrysanthemum

Dry, hard type smoked salmon (typically smoked with alderwood in our area) works nicely here, as does grilled salted salmon. Blanched and sliced shungiku stems add a softly bitter, refreshing note to this mazegohan mixed rice.

A tasty quick pasta for lunch, this aglio olio e peperoncino gets a boost from smoked salmon. Fresh arugula adds a pleasant, nutty flavor.
