Abokado to tomato no sotee / sauteed avocado and tomato

When one more filling yet not too heavy dish is wanted, this quick saute with avocado and tomato is a great addition that also offers an invigorating punch thanks to ground black pepper and lemon juice. Better yet, this is virtually sodium free. Select a ripe avocado and a ripe yet still firm tomato for the best contrast in texture.
Adapted from Chinami Hamauchi's ”Enbun 1/2 demo Konna ni Oishii! [Delicious at Half Sodium Content]," in which only avocado is used.

Suigyoza no chige-fu nabe / jjigae-style hotpot with shui jiao dumplings

A spicy red hotpot for chilly days, very filling yet gentle on your stomach. Have lots of fresh lemon wedges ready -- they will work some amazing magic at the end.
As with any nabe hotpot, any ingredients in the fridge or on the kitchen counter can go in. Explore with what you have, and find your favorite combinations.

Ebi no paeriya / paella with prawns

A party paella with botan-ebi spot shrimp at the height of their season! The broth is also made with spot shrimp, infusing the rice with the yummy flavor of shrimp at their best.

Yooguruto no muusu / yogurt mousse, with blueberry sauce

A very lightly sweetened, fluffy and creamy yogurt mousse. One of my standard dessert choices to serve after a meal with guests.

Sake no karaage marine / marinated deep-fried salmon (white wine vinegar version)

Marinade based on white wine vinegar has a soft edge, making this a pleasant chilled dish in summer. Lemon and onion slices also neutralize the oily taste of deep-fried salmon while adding a refreshing note. Great as an appetizer with both Asian and Western food.

Kaki furai / panko deep-fried oysters

A typical oyster dish in Japan. Juicy panko deep-fried oysters served with julienned cabbage used to be one of Tom’s favorites at a neighborhood restaurant near his work in Tokyo.

Remon soruto / lemon salt

Flavored salt for tempura. It is especially good with firm green vegetables such as asparagus and broccoli (stems in particular).

Yukimi-nabe / hot pot with tofu and grated daikon radish

Grated daikon radish turns to falling snow... that's the idea behind the name. A great nabe hot pot dish when your stomach feels a bit tired of heavy, rich food.
