Keeru to kurumi no beeguru / kale and walnut bagels

One of our bagels takes advantage of kale for a deeper flavor, which is especially noticeable when toasted, while toasting also intensifies the crunch of walnuts.


This is a variation based on a plain version I adapted from ChefSteps (Amazing Chewy Bagels From Scratch). In my adaptation, shiokoji salted rice malt to lower sodium content also conditions the dough, making it softer and triggering a Maillard reaction due to its enzymes. For this reason, I do not use diastatic malt powder, which the original recipe lists as a key ingredient, but I do use non-diastatic malt powder for flavoring. Yet considering kale's effect of making the dough taste slightly "earthy and green," non-diastatic malt powder may not be needed at all in the recipe below. Until I experiment further, this is what appears at our table. These are smallish bagels packed with flavor.

Kurumi daifuku / soft rice cake with sweetened azuki bean paste and walnuts

Toasted walnuts add a rich taste and crunch to a standard everyday daifuku rice cake. Turbinado in soft gyuhi mochi goes really well with walnuts and tsubuan crumbly azuki bean paste inside. Best on Day 1 for contrasting texture with walnuts, especially while still warm.

Arugura to biitsu, kurumi no sarada, zakuro doresshingu / arugula, beet and walnut salad, with pomegranate dressing

Nutty arugula paired with toasty walnuts, earthy sweet and juicy baked beets, and sweet yet punchy kumquats. A simple dressing made with pomegranate molasses binds these elements amazingly well.

Bakuraba / baklava

This satisfies Tom's new habit of eating sweets without increasing sodium intake. But when I made these baklava earlier last year, he blamed me for him gaining weight, as I repeatedly experimented to figure out a good proportion of ingredients, especially erythritol (calorie- & net-carbs-free sugar substitute) so it does not re-crystallize when completely cool and does not trigger any noticeable cooling sensation in the mouth.

My original thought was, if I made 28 small pieces in one batch, they should last for 28 days or at least a few weeks. Making baklava from scratch is time consuming, but it would be not bad if each batch lasted that long ... So far I have been proven ridiculously wrong. Tom cannot stop reaching for more pieces. Although the recipe below is not heavily sweet, as with other sweets I make, it could be addictive.

Maitake to warabi no gorugonzoora pasta / pasta with hen of the woods mushrooms and bracken in gorgonzola sauce

Crunchy maitake is a nice addition to rich gorgonzola sauce for pasta. A vegetable in season -- warabi this time -- takes away the heavy note of the cheese sauce, which is also lightened by replacing the typical heavy cream with a combination of soy milk and sakekasu sake lees.
Since the sauce cooks fast once you add the soy milk and gorgonzola mixture, start cooking pasta before starting to saute maitake and warabi for the sauce.

Goheimochi / grilled rice cakes with sweetened perilla seed, walnut and red miso sauce

A regional favorite snack from the Takayama and Gokayama areas in Gifu and Toyama prefectures. Simple rice cakes made by pounding regular steamed rice are grilled and brushed with sweet, nutty sauce. Goheimochi stalls are found here and there in and around these tourist destination towns in the mountains. I almost always had one every time I visited these areas -- it tasted so good in the open air with majestic mountains and rivers in the background or while browsing streets and alleys surrounded by wooden buildings hundreds of years old.

Kaki to shungiku no kurumizu-ae / persimmon and garland chrysanthemum in sweetened vinegar with walnuts

“Wow!” Tom said, after his first bite. Sweet orange-colored autumn fruit is paired with aromatic garland chrysanthemum, with lightly sweetened vinegar and walnuts smoothly working as a go-between.

Fuki-miso, kurumi iri / Japanese butterbur buds with red miso and walnuts

A red version of fuki-miso. Walnuts add extra depth, texture and a mild flavor. This dish is aromatic rather than bitter. Great with plain rice or sake! A favorite of Tom's.
