Tsusuna to atsuage no oisutaasoosu itame / stir-fried New Zealand spinach and deep-fried tofu with oyster sauce

A quick stir-fry with tsuruna New Zealand spinach that takes advantage of aromatic oyster sauce to mask the vegetable's slightly earthy taste. Atsuage deep-fried tofu makes this dish somewhat substantial.

109 calories; 8.3 g protein; 7.0 g fat; 3.1 g carbohydrate; 1.3 g net carbs; 102 mg sodium (with 50% reduced-sodium soy sauce); 0.04 mg cholesterol; 1.8 g fiber; 256 mg potassium

Shishito to eringi, myoga no miso-itame / stir-fried shishito peppers, king oyster mushroom and Japanese ginger buds with miso sauce

Crispy shishito and myoga stand out in this small side dish, which offers the punch of red miso against the soft and chewy texture of eringi mushroom. To ensure crispiness of shishito and myoga, cook eringi on relatively high heat to prevent it from letting out moisture and making everything soggy.

1/2 of recipe:
36 calories; 2.0 g protein; 1.3 g fat; 5.7 g carbohydrate; 3.1 g net carbs; 81 mg sodium (with shoyukoji soy sauce rice malt made with 50% reduced-sodium soy sauce); 0 mg cholesterol; 2.6 g fiber; 252 mg potassium

Miso yasai raamen / vegetable ramen noodles with miso-flavored soup

Finally, a sodium-savvy ramen with plenty of vegetables and great-tasting soup! More toppings mean more soup going into your mouth, especially when toppings are cut or sliced into small sizes, as a greater surface area is likely to carry more soup into your mouth. So for a reduced-sodium version, having lots of toppings is counter-intuitive, yet we opted for julienned vegetables for the extra flavor they add.

After being on a reduced-sodium diet for more than three and a half years, this is quite salty for us and definitely tasty. The recipe below is at the low end of the sodium content spectrum (soup has a salt level of 0.8% whereas soup at ramen shops averages 1.5%). Feel free to add more seasonings to taste, at your own risk ...

1/2 of recipe (approx. half of soup left in bowl):
515 calories; 17.0 g protein; 9.3 g fat; 88.1 g carbohydrate; 15.8 g net carbs; 781 mg sodium* (with reduced-sodium miso and shoyukoji made with 50% reduced-sodium soy sauce); 11 mg cholesterol; 7.5 g fiber; 706 mg potassium
*Stir-fried vegetable toppings alone contain 100 mg sodium per serving.

Kaminaridofu / pan-fried tofu with soy sauce and katsuobushi

With the literal meaning of "thunder tofu," this dish is well named; the water from these small cubes of firm tofu makes a rumbling sound when fried at high heat. For the sodium-savvy version below, I use less oil so that the amount of seasoning (soy sauce in this case) can be reduced. As a result, the tofu cubes only make a tame roar, if any. While the dish is now less entertaining to cook in an audio-visual sense, it has the advantage of requiring less cleanup of spattered oil. Taste-wise, this is quite strong thanks to the intense flavor of katsuobushi bonito flakes, and the strong flavor is highlighted by refreshing green onion slices. A small yet satisfying dish.

Ninjin no shirishiri / stir-fried shredded carrot with eggs

A tasty everyday dish from Okinawa that has been gaining popularity across Japan in recent years. Slowly sauteing carrots with a small amount of oil enhances the sweetness of the vegetable, and eggs add a gentle, rich taste. Among a number of variations, canned tuna is often mentioned as an addition. The recipe below features okara-konnyaku (soybean pulp yam cakes) to make the dish more filling as well as snow peas for color.

Renkon to ginnan no shiokoji kinpira / spicy lotus root and gingko nut saute

A quick saute of crunchy lotus root slices and chewy gingko nuts. While soy sauce is usually the main seasoning in salty, sweet and spicy kinpira saute, using salt or shiokoji salted rice malt helps to retain the color of ingredients and brings out the taste of ginkgo nuts.

Tosho chaamen / dao xiao chao mian / fried hand-shaven noodles

A cheater version of hand-shaven noodles made with a peeler, and stir fried with an assortment of goodies. Noodle dough is basically the same as teuchi udon handmade wheat noodles but uses less water, which makes the dough prep a bit more time consuming (dry and wet ingredients need to rest together longer before kneading). Less water in turn ensures easy shaving and cooking at the end. While any goodie works great in this noodle dish, dried shiitake mushrooms with their deep flavor and aroma function like underlying seasoning to bind everything together. Very tasty and satisfying.

Koyadofu to kinoko no raapu-fu / freeze-dried tofu and mushroom larb salad

Zesty, sweet and salty. Commonly made with meat or fish, this is a vegetarian-friendly Thai larb (with fish sauce). Freeze-dried tofu has a sponge-like texture and soaks up the tasty seasoning. Mixed with umami-packed mushrooms, this filling dish works as a starter or even a quick bite when feeling hungry. Cilantro and mint provide a pungent, tangy and fresh note to complete the melody.

Okara tamago karee-aji to horenso, komatsuna no bataa-joyu itame / stir-fried spinach, komatsuna and egg with soybean pulp and curry, soy sauce butter flavor

A variation of leafy greens stir-fry with egg and soybean pulp. Flavoring with a small amount of soy sauce alone is not strong enough for some people, including Tom. While adding shiokoji salted rice malt or salt usually takes care of the issue, curry powder, a versatile spice, gives an instant appetizing boost without adding sodium. The spice also results in a meaty taste with the egg + soybean pulp mixture.

1/2 of recipe:
97 calories; 5.8 g protein; 6.3 g fat; 4.4 g carbohydrate; 0.9 g net carbs; 102 mg sodium (with 50% reduced-sodium soy sauce); 120 mg cholesterol; 3.5 g fiber

Karifurawaa no sujoyu-itame / stir-fried cauliflower in vinegar soy sauce

A versatile stir-fried cauliflower dish that can be cooked and served in a number of ways. Steam briefly for a crunchy mood changer, or steam longer for comforting tenderness. Keep the heat level relatively low to maintain the white appearance, or raise heat somewhat to enjoy the toasty note of soy sauce. Serve hot as a side dish, or serve cold as an instant pickle ...

Asupara no kani-ankake / asparagus with thickened crab sauce

Another dish that appears at our table when asparagus season rolls around. The sweet note of juicy asparagus is a natural match with Dungeness crab. This quick, easy and delicious Chinese-style ankake (dish with thickened sauce) is a surefire hit.

Hotate to meshida no bataajoyu itame / stir-fried scallops and Western lady fern in butter and soy sauce

The softly mellow taste of scallops and faint bitterness of lady fern heads complement each other really well as the no-fail combination of butter and soy sauce works again here for a pair of ingredients from the sea and the land.

Kinoko no sotee sarada / salad with sauteed mushrooms and citrus soy sauce

One of my typical baby leaf salads comes with sauteed mushrooms. Sauteed mushrooms work as a dressing, so cook them on lower heat to get the moisture out for mellower texture. Olive oil goes so well with citrus soy sauce, adding another fruity layer to the overall taste. See notes if you are out of ponzujoyu.

Moyashi to satsumaage no itamemono / stir-fried bean sprouts and deep-fried fishcake

A light and satisfying stir-fry featuring crispy bean sprouts. Satsumaage fishcake adds a nice flavor and contrasting texture as do shiitake mushrooms, while nira garlic chives chime in with their punchy taste as egg mellows it down ... The recipe below features soybean sprouts, but mung bean sprouts work great, too. See notes for some tips when using mung bean sprouts.

Koebi no mabodofu / mapo tofu with bay shrimp

Very tasty. One of my favorite Chinese dishes from our kitchen, now made to be sodium savvy by tweaking seasoning in the original recipe -- replacing sake with Shaoxing wine, black bean paste with black beans themselves, partially replacing soy sauce with shoyukoji as well as tobanjan with red chili pepper, and adding kurozu brown rice vinegar. While this features bay shrimp, it is also good with ground or finely chopped pork or a combination of pork and beef.

Nasu to atsuage, shishito no misoitame / sauteed eggplant, deep-fried tofu and shishito peppers in miso sauce

Kaisen chukadon / Chinese-style seafood saute over steamed rice

A tasty Japanese donburi of a classic Chinese dish. This is a reduced-sodium version of a previously posted chukadon recipe. It uses more vinegar than the original recipe and much less soy sauce and oyster sauce, but the sourness is milder... Why? Vinegar is boiled (in microwave) to get rid of excess sourness, leaving just enough sour taste and a sensation that mimics saltiness. This recipe also uses Shaoxing wine instead of sake to ensure a flavorful outcome. All in all, this is a very satisfying dish that sticks to your ribs.
