All recipes are for 2 servings unless noted. Oil is canola oil and salt is kosher salt.


Tahini sauce

The proper companion for falafel.


2 tbsp tahini
2-3 tbsp water
1 large or 2 small lemons (approx. 3 tbsp lemon juice)
1 tsp cumin powder
1/8 tsp salt


Put tahini in a small bowl, add water, and microwave 20-30 seconds. Mix well.


Squeeze in lemon juice, 70% of the specified amount at first. Taste, and add more if necessary.

Mix in cumin powder and salt.

  • Tahini kept in a container often separates into oil and paste. Mix before use in the recipe.
  • Equal parts tahini and water (2 tbsp here) would result in the consistency of ketchup or mayonnaise. Add more water for a looser consistency.
  • Microwaving tahini and water is not necessary but does make mixing these two easier. Hot water would work, too.
